We use Exchange at work as well and it works quite well for me. I'm only going from memory here as I'll need to double-check the settings at work but here goes:

1. If you are able to send mail then I would assume that there is a problem with your Incoming mail settings. In our case, the entry reads "mail.domainname".

2.  In the OWA entry field, place the same address.

3. As you are able to send messages, I wouldn't touch those settings at this time.

4. In order to have all your addressing info available, you must use the Directory Access Utility to bind your MacMini to the MS domain. An Administrator is required for this process. If you do not bind your computer to the domain, addressing emails gets to be rather cumbersome. Once bound, you will not actually see the addresses in the Address Book but if you start typing the name of a person on the Exchange server, Mail will complete it for you or give you some choices. the only issue I've found is the ability for the binding process to access existing distribution Groups. If this is of interest to you. let me know and I'll walk you through my solution.
