The issue of multiple print copies came up a few months ago.  Here's 
the answer that Patrick Neazer gave under the subject line of
multiple print copies solution:

Here is how one would get multiple copies for printing: 

1. Go to the application you wish to use. I am using text edit in this example 
though it will work in other places 
2. Press command plus P to bring up the print menu 
3. Use VO keys plus right arrow to move to the unknown which is immediately 
after the copies and pages pop up button 
4. Use VO Keys plus F5 to identify what is under the mouse. You should here 1, 
edit text is under the mouse or something close to that 
5. Here is where it gets a tad strange. You have to do the equivelent of a 
right click which, on the IBook is holding down the option key plus the mouse 
pad. 
6. If you use the numbers and the arrow keys, you can put the number of copies 
you want to make in the edit box. You will have to use VO keys plus F5 to 
verify the number of copies.

I do hope this helps anyone who was as lost as I was when attempting to figure 
this one out (smile).
