Only in a case of replying will it come the closest to an automatic send, and of course it won't do that either, just show the account that has been used.

Only in receiving mail do you have a lot of room to work with.

In fact any time I originat a new message regardless who is in the address bar Mail offers one of two as the originating acount, have to of course manually choose which one, so good habbit to verifywhich acount it is sending out from, even in replies just to make sure.Especially in dealing with 13or 14 different mail addresses comming in.
