iTunes plays all tracks that appear under the "Songs Outline"
of your Music or Audiobooks libraries.  So you can either restrict the
list of what appears under the "Songs Outline" when you have selected
one of these libraries under your "Source Outline" by requiring other
search matching criteria or by navigating to a playlist in your 
"Source Outline" that already contains these restrictions.

If you know exactly which track you want to play, you can type the
name in the "Search Text" field and only that track will appear in
the "Songs Outline".

An easier solution and more general solution is  to enable 
the browser to select or search for your files.  
Toggling on the browser with command-b allows you to display 
tracks selected by Genre, Artist, or Album.  When the browser is
turned on, when you tab from the "Search Text" field, instead of 
going directly into the "Songs Outline" you will move through 
these three browser fields before going to the "Songs Outline".

If your book is named by Album,  just tab three times past
the "Search Text" field to reach the Album browser. VoiceOver
will say "All" and tell you the number of albums. Either 
use down-arrow to move through the Album selections or type 
the first few letters of the Album to go directly to the Album. 
When you tab into the "Songs Outline" you will only see the
contents of that album.  This is a good way to create a playlist
for an album.

If your book is from Audible.com, use the down-arrow under the 
Genre browser to move to "Audiobook".  This produces a list of all
Audible audiobooks in your library under the "Songs Outline".
You can refine these results by using the other browser fields or
the "Search Text" window.  For example, to see all Audible books
by a particular author, either right-arrow or or tab to "Artist" under
the browser and down-arrow or type the first few letters of the 
author's name (starting with the first name).

If your book is from the iTunes store, use the down-arrow under
the Genre browser to move to "Audiobooks" (with an "s"). Again,
you can refine your search using the selections under the Artist
and Album browser field.

This is an easy way to search your iTunes libraries.  It can be used
to make selections for playlists, but you can also use it to 
narrow down the entries for what you want to play without making
a playlist.

I use "Books & Spoken" for the genre of audiobooks from source 
other than Audible or iTunes.  You can also remove genre from
the browser by unchecking the box for "Show genre when browsing"
under the general pane of your iTunes preferences.  In that case,
only the Artist and Album fields will be used.
