In my opinion, you'll need to determine which app actually opens your desired file type. If iTunes or QuickTime can actualy open them, you'll know for sure by opening the specific app first then going under the file menu and choosing Open. If iTunes or QuickTime can play that file type, then they will play it right away. If they cannot, then the file will be in a "dimmed" state or simply not play. If it does play, then I suggest that you use the "Get Info" window instead of the contextual menu to choose the default application. Do this by selecting the file in the Finder, pressing cmd+i to perform a get Info. Navigate left until you locate the "Open With" disclosure triangle. Expand it and then use the pop-up to select the appropriate app. Then select the item that reds something about "Use this app for all files of this type".
