GarageBand, at least the version before the 08 suite, was somewhat 
accessible in the sense that one could create tracks, route their inputs and 
outputs, arm the tracks, add effects, punch in, etc. fine editing wasn't 
possible without the use of a control surface like the iControl from 
M-Audio. I haven't checked ou the 08 version yet.
