Two ways.

The simplest method is while the application is running, find the application in the Dock, use your contextual menu, and select "Open at login".

The second way is within System Preferences: Accounts. Choose the "Login Items" tab. Below the table is a plus and minus button. The plus will allow you to navigate to an item and select. This can include Applications, Documents, Folders, Network mounts, etc.
