Couple of ideas.

First, make sure you're opening the podcast heading to see what's inside the folder. Think of each podcast as a folder. Each one you subscribe to appears in iTunes with a triangle next to it. When collapsed, the triangle points to the right. When open, the triangle points down and shows all episodes you've got for the show. To open the list just hit VO keys and the slash. You may find your episodes this way.

When you just hit play on the podcast name and don't open it to scroll down, its just going to play the first and most recent episode you've downloaded.

If you open the list and don't find more than one show or whatever number you want downloaded, it could be a couple of things:

1. Check your settings once again for how many podcasts to keep.
2. You could have deleted the previous shows.
3. You could have just subscribed and only a few shows have been published since you subscribed.
4. The show itself is new and the publisher only has a few shows out.
5. The publisher may only have a couple of episodes out on the feed.

Sorry for such a list but it could be a number of things.
