when you are setting p mail for the first time, choose do not automatically set up account, also choose do not take account on line. when the account is created, go to preferences in mail choose accounts and then the advanced tab and set the delete from serer function as you like. Not to worry though because if you don't set it, it only deletes message more than a week old by default.
