You asked: Is it possible for me to assign a short cut combination to save attachments in Mail? It would have me having to navigate to through the File menu every time I get sent an attachment.
TK: Yes you could create that shortcut. I don't believe it's really necessary though since going to the File menu is not really necessary for saving attachments. If you press return to open the given message, navigate left with VO to the Save pop-up then arrow down to the attached filename you wish to save, then press return, the Save dialog will appear.
