Give Final Vinyl a try. It's free and no longer requires the iMic device, but will still work with if you need it to. Final Vinyl 2.5 is what you want. It's updated for Leopard. You can get it from

It is really easy to use. One little note-- the buttons will just say Button when you VO across them, but if you press VO h, you will hear the name of the button you are on. It also has some basic editing functions. For example, you can place marks to make separations between tracks for placing on a CD or something like that. It also has some really nifty EQ and other Post Processing functions. It also has automatic volume if you want to use it. Or you can manually set the recording volume. There is also a Listen button so you can listen through headphones before recording. However, when you press record, you will always hear what is being recorded and I don't know of any way to shut the monitoring off while recording other than either using headphones or hitting the audio mute button on your keyboard before starting the recording function.
