I'm not a mac user yet but I presume that settings are the same on iTunes 
for mac.

Make sure that "mono mode" is not being forced by the iTunes MP3 encoder.

In the iTunes, edit menu, preferences, go to the "advanced tab", then go to 
the subtab called "importing". on the encoder setting, you choose "custom". 
On Windows, when you choose "custom" and you close the list, a new window is 
opened so you can adjust the encoder settings. On the item "channels", 
select "auto" so that the encoder makes propper channel adjustments 
according to the audio source. Done this, press the "ok" button in all the 
windows. Now the encoder should use automatic channel configuration for each 
audio you encode. If is there any aditional trick, please guys let me know 
too.
