I have three suggestions for you:
1. Ignore Apple and just use case insensitive in your volume format.
If it wasn't allowed, they'd not even give you the option to install
on that format, right? I think if you're careful and know what
you're doing it may be ok.
2. Partition the Mac Mini Drive into two segments, maybe use /usr/
as your second partition and make this case insensitive.
3. Get an external HD dedicated to case insensitive backups. A
firewire drive is so inexpensive these days it's a clear winner.
Heck, get it big enough to backup that Mini too.
IMHO, Your best choice is 3, then 2, then 1.

I'm not sure if this is on topic or off topic for this list, as it is
rather not related to VoiceOver...
I need a case-sensitive file system on a Mac Mini for backing up a
Unix box. I failed to notice, when buying my Mini, that Leopard
defaults to a case-insensitive file system. I gather from googling
that Apple does not recommend running Leopard itself on a
case-sensitive file system, so I assume I need to use a file-based
file system of some sort, meaning an image file. There seem to be a
number of choices there thogh, and I confess I feel rather lost among
them. Reference man pages for hdik(8), hdid(8), and hdiutil(1),
though these are really programs, not formats. hdik(8) lists a few
possible formats, such as UDIF images and sparse images.
What I'd really like is a file that mounts like a disk image but only
consumes as much real file space as necessary for its contents. The
image needs to handle case-sensitive file names, full Unix permissions
(maybe excluding ACLs because I don't use those so far), and possibly
flags (see chflags(1)), though I don't know if I really need the last
of these.
Any information much appreciated, including whether I'm so off topic
as to look like I'm trying to buy a hamburger at a hotdog stand.
