The mac mini most certainly has an input jack along with an output.
The input jack is capable of taking a microphone or a stereo line-in.

I figured that the Mac mini would be the ideal device to record
radio programs because it's low-power so I could leave it on all the
time. Plus, it would be nice to be able to listen to the programs on
the same device where they're recorded. Right now, I have to
transfer them to another computer.
