Do you have an Apple Store near you?  Felix suggests making an appointment with 
them for some help.

Sounds like your mail might have too little free space.  He says he had these 
same problems with mail a while back, and cleaning out the trash and old 
messages made his mail program run normally again.

Just one person's take.

By the way, we have the same updates, and we're not having these problems 
you've mentioned.
