This keyboard shortcut is actually described in the VoiceOver Getting Started Leopard 1.5 document under using Finder and sorting in List View. At the time that iTunes suddenly became accessible an insightful poster pointed out that the Songs outline behaved just like a FInder window, and so commands that worked in the Finder would also work for the Songs list.
