A.R. The command they demonstrate, Speak Selected Text, is not a VoiceOver command. Try setting a shortcut for this command then turning off VoiceOver, and you'll find it works just the same.

Hate to tell you, but in this video, this is not demonstrating VoiceOver. This is demonstrating how to select text and have the system voice read it.
It's certainly not demoing the VoiceOver utility.

That is pretty cool. Too bad the person in the video was dragging and
clicking the mouse cursor to demonstrate all those functions though.
