Dear Mark,
It may be a silly idea but what if you were to export your PDF
document containing tables into another format, i.e. .txt or html?
There should be an option to do so under file menu, either as an "save
as" or "export" menu item.
I've not tried it but that may be an option. Another way that springs
to mind - a very laborious one, would be to print your PDF document on
paper and then scan it into an electronic document like .doc or .txt.
