Oh, before I forget, it may be dimmed do to the fact there is no
networks available. If you go to the menu via control+f8, arrow to
AirPort, arrow down, do you find an option to turn it on/off?

You should only have to turn on the AirPort from the menu where the
clock and so forth is located. It'll look for wireless networks to
join. You shouldn't have to add the service.
