Apple + and - to make fonts bigger or smaller. It increments or decrements by 1 point size which in typography is 1/72 of an inch so 72 point should be 1" high text.

If you interact with the ruler and VO-right a few times you should find a Lists menu button. From there you can pick what style of list you want (bullet, numbered etc). After picking that each item you type will begin with your chosen bullet with a new starting glyph after each return.
