Ok, that's going the other direction :). You'll need a way to hook the
audio and video from your VCR into your Mac, typically this is done
with a TV tuner or video capture device, and its appropriate software.
The software also provides the recording capabilities, though someone
else will have to answer as to which TV tuners are the best for Mac in
terms of accessibility. For most Macs you will want a USB video
capture or tv tuner device, but there's probably some internal PCI
cards that will work with the MacPro if you happen to have one of
those... or a hackintosh of course.
You could also simply hook your VCR's audio up to your Mac's line-in
jack, assuming your VCR has RCA audio outs. This would only give you
the audio, but if you want to record to m4a (mp4/aac audio only) then
this would be enough. You could then use any audio recording program
to record the sound from the VCR. The downside to this is, of course,
you won't get video which may not be a downside to you at all if you
don't want it.

to VHS. Video files such as MP4s and AVIs will work too, if you can
