To re-generate your voice clips, simply turn off the feature in
iTunes, apply, and then turn it back on. This forces the iPod to start
the menus over from scratch. Also, if you perform a firmware update,
the menus will be regenerated. There is a XML file that contains the
information about Voice, Speed, and strings. You'll have to dig for it
though.
