Hey Simon, a few answers for you below you're questions:

1. What am I going to see on the desktop once I install Fusion? Or,
where will it be located?
It'll be in your applications folder, called VMWare Fusion.  You could
of course ad it to the dock or put an alius on the desktop for it like
any other app if that's easier for you.

2. How do I launch it?
>From the applications folder, command-O as per normal.

3. Once I launch it will I lose the use of Voiceover straight away?
Nope, the Fusion interface is, to my knowledge, fully accessible with
VO.  The only thing VO definitely won't read is what's happening
within the OS you're virtualising once you've fired up a virtual
machine.

4. Or do I lose the Voiceover functionality only after launching Windows?
You never lose Voiceover really, it's just that VO won't be abled to
announce what's happening in the OS you're virtualising.  As soon as
you're focused in Windows, VO will go quiet, but as soon as you switch
focus back to Mac OS VO will be as chatty as ever.

5. How do I launch Windows once in Fusion?
If my rusty memory serves, when you launch Fusion you get placed in a
table that's got a list of the Virtual machines you've created.
Choosing one in the list and then hitting the power up button will
start Windows booting.  The process might be different if you're going
to get in to taking snapshots and such for really instant access, but
my memory doesn't stretch that far.

6. How does key mapping work in Fusion so that I can get my insert key for Jaws?
Fusion 2.0 has an in-built keymapper.  I haven't used it myself, but
folks on the list say it's accessible. You won't have to wait long for
more details on it no doubt.

Remember that, even though it might seem like it, Fusion is nowhere
near as daunting as Boot Camp from a risk point of view.  If
everything goes diddly squat (technical term) you can just trash your
Virtual Machine and start over with none of the files on your Mac OS
partition being lost.  In the words of the mighty Douglas Adams, don't
panic.
