You'll find it in mail preferences, I think it's advanced settings or something like that. In Mail, You can press command comma to get Mail preferences.

I noticed one tricky thing: in addition to checking the box to remove mail messages, you then need to go to the next feild and select the option which clearly indicates keep mail 0 days. I'm sorry, I'm being vague, because I know it's there but am not exactly certain of where and the wording of the setting.
