What you suggest is already possible:
The basic concept is pretty simple. Insert the USB key. The key will look like a folder on Linux or a drive letter on Windows. Launch the OOo installation and put it in that folder/drive.

The only problem I experience with this, was that when I launched the 1.1.4 installer from a computer that already had 1.1.4 installed on it, I got the uninstall, repair, or modify prompt. I believe you have to remove some sort of sversionrc file to get it to work. I just did it from a different computer, so I don't know if this works.
