I'm not sure you're doing anything wrong in the 'protection' area, per
se. When you protect a cell, or an entire sheet, you're protecting it from
any changes. It's not surprising that, having protected the cell/sheet,
options like formatting are ghosted. I'd suggest formatting, and otherwise
setting up, your cell/sheet first, then protecting it.
As to the larger tab, you might think about filling out the form for
requesting enhancements--others more familiar with the development of this
package can point you at the link for this.
