I was reading the previous post, and decided to do some experimenting with page styles and discovered that to my disbelief, OOo can't seem to do automatic page number using fields, that will print out. Is there any way to implement this? Am I missing it? Can it be added into version #3?

You can insert page numbers which are then incremented automatically.
They are best to be inserted into the headers/footers of the document.

// create a footer
    insert > footer > default
// insert a page number field
     insert > fields > page number
