I don't think that it should create any problems besides the natural one that you can't use any functionality from the missing parts, e.g. you can't open embedded Calc or Draw objects in Writer documents you get from others. So installing only Writer should work pretty well. But the saved disk space will not be that much, so IMHO it's not recommended.
