Sorry it's not quite working as you expected. Yesterday when I did the
Shift F12 feature in the 2.0 Release Candidate version I'm using, the
most recently used bullet in the document. Today, it's not. ;>
However if you create a style containing the good bullet, then you can
at least just double-click the ChunkyBullet style in the Styles and
Formatting window and that will apply the bulleting you want again. You
don't have to set the chunky bullet formatting up again each time you
start bulleting again.
I do agree however that it would be nice to be able to modify the
default bullet that comes on when you click the bullet icon or press
Shift F12.

Applying quickly: In OOo 2.0 the default behavior for the Shift F12
feature is to give you the style of bullet you most recently used;
you've probably noticed this. Most recently as in the bullet formatting
above where your current cursor is. So if you just want the chunk bullet
to be used throughout the document, you just need to apply it once, then
just use Shift F12 to apply the same bullet wherever you want. (And of
course Tab to indent, Shift Tab to outdent.)

But...
If this is the rational it makes sense - but, it's not working quite as you
say. It's a bit hard to show in email; yes, I choose a bullet to my liking
and then the rest follow... And then, I type something un-bulleted, it
defaults back to the horrid pointy bullet:
*nice bullet* bla bla bla
*nice bullet* bla bla bla
*nice bullet* bla bla bla
bla bla bla
bla bla bla
*nasty bullet* bla bla bla
!!!
So, every time a start a new list (in the same document) I have to re-setup
the default bullet. Which, needless to say, is all a little frustrating (to
say the least). (This also means I can't set up a template with a default
bulleting and numbering, as I might expect.)
