Actually, iirc, many of the configurable paths were removed from the
GUI in 2.0.3 This caused a HUGE howl of protest, and the keening was so
great that the developers (who appear to have made the change rather
capriciously, and with approximately zero consideration for what OOo
users actually wanted) relented and have put many of the paths back in
the Tools>Options section of the UI for user editing. The issuezilla
filing was revealing as initially the developers who changed it
basically said "stop bleating, if changing the path is that important,
edit the config files" - betraying the CLI-philia of their breed. To
paraphrase the late and much lamented Douglas Adams, "OOo developers
had heard of the notion of user-friendliness, and wanted no truck with
it".
