Thank you for your response HS.

Although your suggestion would allow me to enter the text "Figure 1", I cannot 
then take advantage of the autonumbering feature that the recognized 
categories use. This is a big disadvantage for large, multipart documents 
with many figures.

As this is the convention in scientific writing, I think many people would 
see "Figure" as a useful addition to the Category types.

Captions are already there in OOo. Follow these steps:
1. Insert a figure file (eps, jpg, whatever) in your OOo document.
2. Then Insert->Caption
3. In the caption dialog box, either select one of the Categories or 
type in the one you want (in your case, you will need to enter "Figure" 
as the category).
4. Type in the caption in the top text field and press OK button.

You should have your caption below your figure.
