Your best bet for outputting postscript files would be to download a program like PDFCreator (google for it). It installs a "printer" driver that you can use when you print from any program. PDFCreator will allow you to print anything to a file like PS, EPS, PDF, TIFF, etc.
Once installed, you just use Openoffice's print (File>Print) dialog. Select PDFCreator from the list of printers instead of your fax or regular printer. Press print and then PDFCreator will start allowing you to save your document to various filetypes (such as postscript).
