Is there a smarter way to do this, or should I file a feature request?

You could use styles (in fact, always use styles is always my advise). Create a style (or several) with the font you prefer. Also create a template with your favourite style (with your favourite font) and make it your default template.

If you need to apply a font to something, just apply the appropriate style to it. It could be a character style or a paragraph style, it depends on what you need to do.

When you select a font from the font selection drop-down menu, it will appear at the top next time, but I agree with you that it would be a good idea if fonts that exeists in the document already appears at the top right away, so I would suggest to write a feature request.
