Peter Phaal from InMon did a nice writeup of using Open vSwitch with sFlow:

It contains information about configuring sFlow support and shows OVS reporting
to their free sFlowTrend monitoring tool. It's worth a read if you have
interest in digging deep into what's happening in your network--especially if
you're running a virtualized environment.
