It's true.  Only UUIDs are accepted here; names are not.

Does the manual page say you can use that syntax?  I do not think that
it does.

You can use this command instead of the one that you tried:

        ovs-vsctl -- --id=@rec get mirrors mymirror \
                  -- remove Bridge br0 mirrors @rec

or if you just have one mirror:

        ovs-vsctl clear Bridge br0 mirrors
