Are you using the redhat network scripts for openvswitch bridges as
explained in the git repo's
rhel/README.RHEL ?

In a case like that, your bridges are torn down and re-created.

You can also look at the o/p of:
ovsdb-tool -mm show-log /etc/openvswitch/conf.db

That should tell you who is deleting your bridges and the timestamp.
