Jerome has some nice discussion and illustrations on blog.noelios.com that covers the relationship of Restlet to JSR 311 -- and, by induction, Jersey. Restlet is more mature (still young, but stable) and offers broad coverage of the tasks involved in coding and fielding a web application ... I could not put a production system on Jersey yet, as it is still quite a moving target. Still, you should check it out and get a handle on how the JSR 311 annotations work. It's very cool. The code samples you were just working on would look more readable with the JSR 311 annotation approach.
