Hi Carlos, We currently only set the Date header on outgoing responses. There is indeed a need to access this date from the Restlet API!
I've added a comment about it in this RFE: "Support misc HTTP headers" http://restlet.tigris.org/issues/show_bug.cgi?id=282 This will be added to 1.2 M2.
