Hey all, I figured it out... Like I said, I'm a bit of a Java n00b :D
So the cause of this was that I used the RESTlet J2EE edition with a J2SE project... I downloaded the SE version, fired it up in an SE stand alone app and it worked perfectly. So if another poor Java newbie comes along searching for this answer tell them they are using the wrong edition lol.
