I am stuck on CF8 although I'm trying to avoid having to re-write the HTML page to utilize the POI API (or CFXL that Jason provided). It also uses POI, and you can similarly create multiple sheets. Dawn - ColdFusion 9 uses the Apache POI project to create Excel spreadsheets. You can access all of the bits natively to create multiple sheets.
