How data is submitted from the client is controlled on the Submit Button that you create. You create a submit button by dragging and dropping a standard Button object onto your form within Designer and then setting the Control Type to Submit. From there you can specify the Submit URL as well as the format of the data (ie. XDP, PDF, XML). That choice really depends on what you have on the server and your specific use case. XDP is preferred if you have LiveCycle FormServer on the backend or need commments, attachements, etc..., PDF in cases where you are dealing with encrypted or signed PDFs, and XML when you just need the data.
