The purpose for CF in this example would be if you want to use Flash Remoting using ColdFusion components (CFC) in a remote object role. Alternatively, you can just call a CFC from a webservice call via a WSDL as well. CF has the technology. You can then in turn reuse these same CFC(s) to be integrated into AJAX, standard CFM(s) or invoked into object frameworks. Write once, use everywhere.
I do not consider this redundant at all. Do you need to use CF? No. Does Flex play with other programming languages that generated webservices? Absolutely (Java, .Net, PHP ...etc).
