The main means I can think of is to store the user pref in a cookie, then create a servlet filter to extract that as the user makes requests. You could then set it as a session attribute and access it in the defaultsort with a scriptlet.
As for any inherent capability in displaytag for using that sort of information, or extending displaytag to use it, I don't think that there's anything there.
