Yeah, I'll second that. There's probably a way you could do this, but... well, maybe there's not. The <display:table> tag produces a <table> output. The whole exercise would be kind of pointless, like getting a hammer and saying, well, I don't have any nails, but could I use this as a carving knife? With enough work, you probably could, but you've also not saved any effort over going out and getting a decent carving knife.
displaytag is meant to do tabular display of list data. If you're not doing that, I wouldn't try to use it for something else. As a related point, good solid CSS usage doesn't preclude using tables, even for layout. There's really no relation or exclusion there. If you're not using tables for layout, then that's fine, but I just wanted to make that point.
