Here is an explanation of the list of images. The only reason I could see these 
causing a problem is if the USB key was close to full? What size is the USB 
key? (df -k)
x86.eon.0  last image before update
x86.eon.1  prior image before x86.eon.0 update
x86.eon.oem original image

I did a proof of concept here 
http://eonstorage.blogspot.com/2010/05/eon-on-zfs-mirrored-bootroot.html on the 
zfs boot/root mirror but it has some hurdles to overcome. 

Honestly, it is probably more effective to do a manual rsync copy to another 
USB key and keep it as a hot standby. This is not to say it cannot happen but I 
have about 10 development usb keys, all different manufacturers, some cheaper 
and with many hours of use on them and I have yet to have one fail.
