I solved my own problem by modifying the ditaval file as follows:
<?xml version="1.0" encoding="UTF-8"?>
<val>
  <prop att="audience" action="exclude"/>
  <prop action="flag" att="audience" backcolor="#FFE0E0" val="newbie"/>
</val>

(Forgot that the global default for conditionals is to include. :) ).
