It's taken from the last <created> or <revised> element found in <topicmeta>/<critdates> or <bookmeta>/<critdates> element of your <map> or <bookmap>.

The date comes from the value of attribute "golive" or "modified" or "date", considered in that order.

This value of this attribute must be something like YYYY-MM-DD, because it is parsed and then formatted according to the language (xml:lang) of the map.

Example: if golive="2014-02-23",
with xml:lang="en", it gives: February 02, 2014
with xml:lang="fr", it gives: 02 Février 2014




Ideally, I would like to use today’s date as the publication date and
not have to specifically set it anywhere. Is this possible?


There is no variable for that (e.g. {{today}}).

However because the format is specified by the means of the "footer-left" parameter, you can always change the value of this parameter before performing the document conversion. This is typically done automatically by the script which performs the document conversion.
