Definitely the 4 over the 3B - you'll notice the speed improvement - and the price hike is negligable, along with the heat consumption. Heat was a problem with the Pi 4 at launch, but no longer, after firmware updates. I'd suggest 2GB is fine, too.
I've been running piCorePlayer + LMS + player on a 3B+ for a couple of years. Just recently replaced it with a 4 just because I could. The speed increase is tangible - library scans are twice as fast and the interface is noticably snappier. I also recently moved from using my NAS to having a local 512GB USB drive, which is also faster in the USB 3 socket in the Pi 4 - you'll get a similar benefit if you're using an SSD. With the same model case, both the 3B+ and the 4 run at similar temperatures - if anything, the 4 looks fractionally cooler. Mine is housed in the minimal 'Aluminium Armour heatsink case' (https://thepihut.com/products/aluminium-armour-heatsink-case-for-raspberry-pi-4), which I'm a big fan of. To date, I've always used the internal audio from the 3.5mm jack. Admittedly a hat would be awkward, but I'm going to have a play with a USB DAC (Behringer UCA202, which I've had great results with from a laptop).
