Matt, setting up ssl with apache is no big deal. Most mainstream distributions offer detailed documentation on how to do that, with ready precompiled packages. You do not have to use a different OS or a different server.
If you are using either a redhat/fedora/centos flavor or a debian flavor, enabling ssl with apache should be relatively straightforward. I do not mean that enabling it with other distributions is particularly difficult, but with the one I mentioned is really simple, just install the relavant packages and enable the ssl engine configuration file that comes with them.
