What you have is correct.  (You can also use "-l" on the command line.)

Check to see if the logging information is going to your system log rather 
than your mail log.

Also check your syslog configuration.  Other than errors, dkim-filter 
doesn't really log very much at the lower logging levels.  Nearly all of 
the syslog() calls use LOG_NOTICE or higher.
